About three weeks ago I bought a smoker. Since then between workouts and real work I haven’t had time to use it. This passed weekend I finally took 8 hours to smoke some chicken thighs. Here’s how that went.
Took 8 pounds of chicken thighs (20 total) rubbed with olive oil, smoked paprika, salt, pepper, garlic powder, mustard seed, and some chili powder. I don’t even remember how much of each, just did it by taste. Threw some mesquite into the smoker, racked up the thighs, and let it run until dinner. If you’ve never used a smoker or are looking to try one out – 8 hours is a lot of smoke, like tons. You know the smell you get on a sweatshirt after a bonfire, the chicken kind of tastes like that. If you throw on some sriracha it mellows out the smoke a little. Live and learn, 8 hours is too much, next time maybe 4 hours will do the trick.
